A few weeks after we recorded this, we met in person at the Ancestral Health Symposium, and they were as delightful in person as they are on air.

  1. Paul, Are any PHD Retreats being planned in the summer in the future? As a teacher, I can never get away during spring or fall. New England in summer? 🙂

  2. Hey Paul,

    Random question, but would Tiger Nuts be counted as a safe starch? I’m going to be trying them out and was wondering about their status within the PHD realm of eating.

  3. Paul, right after discussing acrylamide and suggesting that steaming and boiling are the best cooking methods for potatoes, you point out that you can essentially let your taste be your guide because a potato combined an acid and fat tastes especially good and is also nutritionally very good.

    But why do think that oven-baked potatoes taste so good?

    (Especially the brown roasted bits — which I think can partly be explained due to crunchiness being satisfying, but they also happen to be more flavorful.)
