Paul, Are any PHD Retreats being planned in the summer in the future? As a teacher, I can never get away during spring or fall. New England in summer? 🙂
We will do summer retreats eventually but I’m not sure when. 2015 looks unlikely at the moment.

Random question, but would Tiger Nuts be counted as a safe starch? I’m going to be trying them out and was wondering about their status within the PHD realm of eating.
Yes, tiger nuts are safe.
Paul, right after discussing acrylamide and suggesting that steaming and boiling are the best cooking methods for potatoes, you point out that you can essentially let your taste be your guide because a potato combined an acid and fat tastes especially good and is also nutritionally very good.
But why do think that oven-baked potatoes taste so good?
(Especially the brown roasted bits — which I think can partly be explained due to crunchiness being satisfying, but they also happen to be more flavorful.)
