Cooking with Rice, I: Chicken Soup

Since many Americans and Europeans are not familiar with how to use rice, we thought it would be nice to offer some ideas, mainly drawn from Asian cooking.

(The zero-carb dangers series is continuing, but as it’s science heavy I thought mixing in a food post would be fun.)

We make a soup every weekend and have a bowl to start dinner most days of the week. Chicken soup is a classic winter dish. We have a brief recipe in the book, but here is a variant. In the book recipe, the chicken is pulled out before it disintegrates, the meat and skin pulled from the bones and returned to the soup. Here, the chicken is left in the soup and cooked much longer to create a thicker and more nutritious broth. The downside is that many small chicken bones are left in the soup.

The Recipe

We like a garlic-salt-and-pepper flavor. Garlic is very important for the flavor of the soup; use at least 12 cloves, I prefer 20. Slice each clove in half so that the flavor seeps into the broth more easily.

Use enough water for the chicken to float but not swim:

For the most nourishing broth, simmer 2-3 hours. Skim off scum that rises to the top, but don’t skim off fat. If you wish a soup with less protein, remove the chicken breast meat after one hour, returning the rest of the chicken to the soup; the breast meat can be used for other dishes, like chicken salad.

Meanwhile, you can pre-soak some uncooked rice in water. This helps the rice open in the soup:

After 30 minutes or more of soaking, pour off this water to remove starch and surface contaminants, then add the rice to the soup. Cook another 1 hour. With shorter cooking, the rice remains intact; with longer cooking the rice releases starch into the broth for a thicker broth.

By this time the chicken should be falling apart. Use a spoon to break it to small pieces. Add salt and pepper and other spices to taste. In the last half hour, you can add any vegetables you wish to cook in the soup.

You can also add vegetables after the soup is finished, for a crunchier texture. In this case we added cilantro, carrots, and scallions:

Finally, after cooking is done and just before eating, you can add fat sources to hot soup for a richer taste. We use egg yolks or heavy cream. I rather like cream with turmeric. Here is how it looks with three egg yolks:

A Sample Meal: Salmon and Mashed Sweet Potato

Marla is having trouble visualizing a 70% fat meal, and asked for a sample meal plan. I don’t have meal plans at the ready, but I do have some random food pictures, and this one shows a typical meal at our home. Click to enlarge:

The meal is salmon, vegetables (spinach, bell pepper, onion, carrot, and lemon slices), and mashed sweet potatoes. The salmon and vegetables were baked together with butter, because that’s an easy way to make vegetables. The sweet potatoes were mashed with butter and coconut oil.

Overall this meal is light in carbs: this is a reasonable amount of meat for a meal (we tend to the low protein side of the diet), but has only about 100 carb calories, so lower in starch than we like. But it is at least 70% fat, probably closer to 80% fat, in terms of calories. So it gives a reasonable idea what our meals look like.

Everything You Might Want to Know About the Potato

The best diet-and-health blog on the Web may be Stephan Guyenet’s Whole Health Source. Those who have read the footnotes of our book may have noticed that he’s our most cited blogger.

Stephan has done a series of posts on the potato, one of our “safe starches” and recommended foods. His latest and final installment has some neat information. His whole post deserves reading, but I want to highlight two points here.

Yes, Potatoes are a Safe Starch

Diseases like obesity and diabetes are primarily caused by toxic foods. Diabetes and obesity became common after vegetable oil and fructose consumption soared in the 1970s – not surprisingly, since omega-6 fats and sugar are extremely effective at inducing these diseases in laboratory animals.

Diabetes and obesity rates may serve as rough indicators of the toxicity of a people’s staple foods.

It is good to see, therefore, that potato-eating cultures have very low rates of diabetes and obesity. Here is Stephan’s graph comparing diabetes rates among the Aymara, an Andean potato-dependent tribe, and Americans:

Stephan notes that the Irish were considered a healthy and attractive people during the period when they obtained 87% of calories from the potato, and quotes Adam Smith’s remark that potatoes were “peculiarly suitable to the health of the human constitution.”

At this blog, we never disagree with Adam Smith.

Potatoes provide adequate protein

Stephan cites a curious study in which a Dr. M. Hindhede kept three men on a potatoes-and-margarine diet for a full year and required them to do increasingly arduous labor. After a year of this potato-and-fat diet, the men emerged well-muscled:

In his book, Dr. Hindhede shows a photograph of Mr. Madsen taken on December 21st, 1912, after he had lived for almost a year entirely on potatoes. This photograph shows a strong, solid, athletic-looking figure, all of whose muscles are well-developed, and without excess fat. …Hindhede had him examined by five physicians, including a diagnostician, a specialist in gastric and intestinal diseases, an X-ray specialist, and a blood specialist. They all pronounced him to be in a state of perfect health.

About 10% of the calories in potato are from protein, and since the margarine may have accounted for 50% of calories and was protein-free, the men’s protein intake was around 5% of calories. The experiment is consistent with our view that protein intake of 200 calories per day is sufficient to maintain excellent health and build muscle.

The Oldest Profession: Quinoa, Millet, and Emmer and Einkorn Wheat

I thought I’d bring some information up from the comments so it can be visible to people doing searches.

In the book we speak of “safe starches” whose safety is well attested: rice, sweet potatoes, yams, potatoes, taro, tapioca, sago. We also speak of the toxicity of grains and undercooked legumes. But a variety of less popular foods were left unmentioned. These include quinoa and millet.

Mark asked about quinoa and I gave this view of it:

Well, quinoa is not a grain or legume and so does not fall in our excluded foods, but we haven’t been including it in our “safe starches” list either, mainly due to caution and unfamiliarity on our part.

Quinoa does contain saponins (http://pmid.us/18452959) even after being debittered (http://pmid.us/11829658), and needs proper handling including washing before cooking. With proper handling it seems to be relatively safe. A Pubmed search on “quinoa toxicity” yields nothing; “quinoa saponins” yields 22 hits.

Quinoa does have a lot of protein (12-18% per Wikipedia), which makes me suspicious. Plant proteins are behind nearly all the toxicity effects of grains and legumes, and I prefer to avoid plant protein. It’s possible there are undiscovered toxicity effects.

There was a debate in the Journal of the American Dietetic Association in Nov 1999 about quinoa. (See http://pmid.us/10570670 and http://pmid.us/10570669.) One writer notes that the Celiac Sprue Association classed quinoa as “unsafe” because some celiac patients have had bad reactions to it. This does not mean that quinoa would cause problems to someone with a healthy bowel, but there is a lack of evidence either way.

Off the cuff, tentative view? Quinoa seems to be quite a bit safer than grains, and since “the dose makes the poison” it can probably be eaten in moderation as a way to diversify the diet. However, its safety is not as well proven as, say, rice or sweet potatoes or taro, and personally I wouldn’t make it my primary starch source.

This is the basic problem: we just don’t know. We know about the toxicity of wheat because billions of people have made it their primary calorie source and we can see that after 60 years of eating it, people have worse health than those who made rice their primary calorie source. Then, because wheat is so important, scientists have studied it and identified most of its toxins.

With quinoa, we lack that kind of usage and there has been little scientific study.

Since the Perfect Health Diet only calls for around 400 starch calories a day, it’s not too arduous to confine one’s self to only those starches known to be safe. At least, that’s my view.

Becky then asked about millet. I replied:

Millet is a grain and so it is guilty until proven innocent. Grains in general are very rich in toxins, so odds are millet is no exception.

That said, it is an ancestral variety which may not have undergone a lot of modification by breeding. Dr. Davis has presented some evidence that the biggest problem with wheat may be that it has twice been hybridized, expanding its genome from 14 chromosomes in its ancestral form (einkorn wheat) to 28 chromosomes (emmer wheat) through hybridization with goat grass, later to 42 chromosomes through another hybridization with Triticum grass to create modern wheat. This means wheat has toxins from three separate species, which may explain why it is the most toxic grain.

Dr William Davis has reported that some people who cannot tolerate modern wheat can tolerate einkorn: see here and here.

I recommend avoiding millet and other grains except rice, whose safety is well-attested. Since we only need about 400 carb calories a day, it’s not too difficult to confine one’s self to known-to-be-safe carbs.

But, daredevils, drunkards, and other risk-lovers may find millet worth the risk!

I was fascinated by Dr Davis’s report that ancestral wheat varieties may be much safer than current strains. It makes sense: tripling the number of plant toxins through hybridization must increase toxicity.

It appears that the progress of agriculture through hybridization and breeding has caused our food to become progressively more toxic. And this toxification of food was not an innovation of modern industrial agriculture, but was already underway in the early Neolithic.

So next time you’re tempted to criticize Big Pharma and Big Agriculture for placing mammon ahead of safety, remember that Natufian farmers were doing the same thing! Perhaps the oldest profession was not prostitution, but genetic engineering of food.
